I hope all of your Thursday’s turned out amazingly!  Mine was all over the place.  I told you yesterday about how the kids were out of their minds yesterday.  Well before bedtime, my throat was def achy and soar.  So, I decided to take the cures everything, NyQuil, which made me sleep like a baby.  However, this morning I was like a zombie trying to get up at my usual early hour.  Therefore, I bailed on the girls this morning for our work out.  I obviously felt that my sleep was much more important this morning.  So, I got up with Dustin at 5.  While he was getting ready for work, I drank some hot lemon water.  This always makes me feel better, especially when my throat is achy.  I then made the same oatmeal concoction, I had yesterday morning. I then had my first cup of coffee for the day.  Over the years, I have trained myself to drink my coffee black.  Now, I won’t have it any other way, and these days I can’t get enough.  And, it doesn’t help that I recently read in a magazine, that three cups a day is beneficial to your body.  Now I feel like that is how many I need.

After breakfast, and a little news watching, I headed back into the kitchen to prepare lunch.Image

This morning I fixed a salad that included spinach, cherry tomatoes, carrots, avocado, and corn.  I added a lunch size packet of low sodium tuna and olive oil and balsamic vinegar.  The many flavors were amazing together.  The avocado and corn def stole the show.  I love corn in a salad, especially, the garden fresh corn I had today.


Once my lunch was ready, I jumped in the shower and got ready for work.  Because of my late wake up I threw some dried cranberries and almonds to snack on.  I pulled them out around 7:30.   I know we have an early lunch, 10:45, but my stomach is always grumbling by 10.  I also threw in a green apple and a handful of almonds for my mid afternoon snack.


My day for the most part was great.  I was in a good mood, and although when I talk I sound like a man, I was rather talkative to co-workers.  It was one of those productive mornings, where I had accomplished a lot in the classroom.  Maybe it was because of my second cup of coffee at school. 😉  But, as the day went on, my voice got weaker and weaker.  It was so frustrating trying to get anyone’s attention by the end of the day.

Therefore, I def had a smile on my face when 3:30 came around.  I’m not sure if it’s just me, but when I get home from work around 3:45 or 4, I am starving and ready for dinner.  I would rather eat an early dinner then a late one.  I never sleep or feel well when I eat late.  Hopefully I’m not the only teacher that forces their husbands and families to eat dinner at 4:30 in the afternoon.  Right? So, obviously I was starving when I arrived home.  So after getting a much needed hug from the hubby, I got to work on dinner.  Tonight was hamburger night.  (Turkey hamburgers that is.)  I grilled up a few hamburgers for Dustin, our frequent visitor, Morgan, and I.  I also had plenty of great leftover veggies to heat up as side dishes.  Cabbage and kale for me!  Once we were finished we dug into the frozen yogurt!  Can’t get enough of this stuff!


Again, there was not much mention of practicing any sort of pageant material before she left tonight.

Because of my lack of work out today, I hope to wake up bright and early to accomplish a really sweaty workout in the morning!  On Saturday, my sister-in-law, Shannon, and I are signing up to run in a local 5k.  It is going to be only my second run since running the Rock n Roll half marathon in New Orleans on February 24th.  I still feel like my knees are in recovery.  Hopefully the pace isn’t to quick and I’m feeling fresh and ready to go on Saturday.

We have also scheduled to run in an 8k on St. Patrick’s Day, and guess who is joining??? Dustin!  I’m so excited!  This is our first run together!!  I hope he loves it!!  I need to figure out what our green outfits will look like.

The Blog Begins!

Hello Everyone!  Ha, I say everyone in hopes that one person begins to read my blog!  Today is my first post.  I have been working on my page for a while, but please know it is work in progress.  Hints and suggestions are always greatly appreciated.

IT’S WEDNESDAY!! – Half way through the week!!!

I hope you all had a wonderful Wednesday.  Mine started off real early this morning with a cup of hot lemon water, while I prepared breakfast.


Breakfast turned out to be a bowl of oatmeal that included; cinnamon, flaxseed, 2 tablespoons of peanut butter(maybe more ;)), a small banana, a few slices of strawberries, and a splash of almond milk.  This is one of my favorite breakfasts and will definitely be seen a ton on here.  I then followed it up with a cup of coffee.


Then at 4:45 I met the girls for our morning workout.  We decided to do a 30 minute Jillian Micheal’s workout video.  We did week 2 on the, “Ripped in 30,” DVD.  It includes 3, 3-2-1 circuits. (3 minutes of strength, 2 minutes of cardio, and 1 minute of abs)  It definitely got my heart rate up and produced some lovely sweat.  It was nice to use some weights for a change.  We usually do strictly cardio.  (insanity, jogging, etc.)

Getting back to the house, I immediately began preparing my lunch for today.  I prepared a spinach salad that included, cherry tomatoes, carrots, celery, avocado, and two boiled egg whites.  I topped it off with some tasty olive oil and balsamic vinegar.  I also snagged a half of an orange from the lunch line.  Just couldn’t help myself!!  Having oranges on the menu always put out such an amazing aroma throughout the cafeteria.


Before heading out the door for work, I drank a half a cup of grapefruit juice that included 2 tablespoons of apple cider vinegar.  (I swear my face has cleared up so much because of this new ritual)  I also had 3 hard boiled egg whites to hold me over until lunch.

School was exhausting!  Is it a full moon??  The kids were super talkative and energetic.  Isn’t it funny how they are energetic when you are tired, and tired when you are energetic.  They definitely had too much energy for me this afternoon.  So luckily, it was not a rainy day and we went outside for recess.  While outside, I ate my afternoon snack.  I had a delicious green apple and 12 almonds.  My afternoon snack is as important to me as their recess is to them.  I have got to have that pick me up to help me get through the rest of the day.


While prepping lunch this morning, I also tackled dinner.  CROCK POT!!! My favorite invention, took care of dinner tonight.  I threw in three large chicken breasts, 4 cubed Idaho potatoes, carrots, celery, and a can of low sodium green peas.  I seasoned it with a french onion soup packet and half of a ranch packet.  I then added 1/2 cup of water to liquify it a bit.  So basically I threw what we had in the pot!!  How convenient is that!  It was so welcoming to walk into the house.  It smelled so good!  I tried to put extra in the pot this morning knowing that my sister would be stopping by.

My sister, Morgan, is currently a senior in high school in Franklinton.  She stops by probably once a week when she can.  She stays so busy, due to cheer, dance, and a million clubs.  We have actually been seeing more of here lately.  She has signed up to be in the Farm Bureau Pageant in town.  I actually was in a few pageants myself, and so I’m her coach.  That doesn’t mean that I’m that great, it just means I’m free! 🙂  So she has been stopping by in the afternoon, and we have been going over interview questions and her modeling.  We usually end up just laughing at each other.  We always make sure to add, “World Peace,” in a few questions here and there.  I just enjoy her being around!  She came by tonight, but we didn’t even get to pageant stuff.  Just talked about life, while we sent Dustin out on an extremely important errand……Frozen Greek Yogurt run.  Franklinton is a very small town and does not have a Menchie’s, Pink Berry, etc.  So I have found my new obsession in Winn Dixie.  Yoplait makes a frozen Greek yogurt by the pint.  I have gotten Morgan hooked.  So Dustin came back with strawberry for her, honey caramel for me, and he got Blue Bell cookies and cream for himself.  It is definitely easy to forget portions when digging into that pint.

So now Dustin and I are on the couch waiting on New Girl to come on.  I love Wednesday night television!  Have a great night! We are on the down ward slope of this week!
