I hope all of your Thursday’s turned out amazingly!  Mine was all over the place.  I told you yesterday about how the kids were out of their minds yesterday.  Well before bedtime, my throat was def achy and soar.  So, I decided to take the cures everything, NyQuil, which made me sleep like a baby.  However, this morning I was like a zombie trying to get up at my usual early hour.  Therefore, I bailed on the girls this morning for our work out.  I obviously felt that my sleep was much more important this morning.  So, I got up with Dustin at 5.  While he was getting ready for work, I drank some hot lemon water.  This always makes me feel better, especially when my throat is achy.  I then made the same oatmeal concoction, I had yesterday morning. I then had my first cup of coffee for the day.  Over the years, I have trained myself to drink my coffee black.  Now, I won’t have it any other way, and these days I can’t get enough.  And, it doesn’t help that I recently read in a magazine, that three cups a day is beneficial to your body.  Now I feel like that is how many I need.

After breakfast, and a little news watching, I headed back into the kitchen to prepare lunch.Image

This morning I fixed a salad that included spinach, cherry tomatoes, carrots, avocado, and corn.  I added a lunch size packet of low sodium tuna and olive oil and balsamic vinegar.  The many flavors were amazing together.  The avocado and corn def stole the show.  I love corn in a salad, especially, the garden fresh corn I had today.


Once my lunch was ready, I jumped in the shower and got ready for work.  Because of my late wake up I threw some dried cranberries and almonds to snack on.  I pulled them out around 7:30.   I know we have an early lunch, 10:45, but my stomach is always grumbling by 10.  I also threw in a green apple and a handful of almonds for my mid afternoon snack.


My day for the most part was great.  I was in a good mood, and although when I talk I sound like a man, I was rather talkative to co-workers.  It was one of those productive mornings, where I had accomplished a lot in the classroom.  Maybe it was because of my second cup of coffee at school. 😉  But, as the day went on, my voice got weaker and weaker.  It was so frustrating trying to get anyone’s attention by the end of the day.

Therefore, I def had a smile on my face when 3:30 came around.  I’m not sure if it’s just me, but when I get home from work around 3:45 or 4, I am starving and ready for dinner.  I would rather eat an early dinner then a late one.  I never sleep or feel well when I eat late.  Hopefully I’m not the only teacher that forces their husbands and families to eat dinner at 4:30 in the afternoon.  Right? So, obviously I was starving when I arrived home.  So after getting a much needed hug from the hubby, I got to work on dinner.  Tonight was hamburger night.  (Turkey hamburgers that is.)  I grilled up a few hamburgers for Dustin, our frequent visitor, Morgan, and I.  I also had plenty of great leftover veggies to heat up as side dishes.  Cabbage and kale for me!  Once we were finished we dug into the frozen yogurt!  Can’t get enough of this stuff!


Again, there was not much mention of practicing any sort of pageant material before she left tonight.

Because of my lack of work out today, I hope to wake up bright and early to accomplish a really sweaty workout in the morning!  On Saturday, my sister-in-law, Shannon, and I are signing up to run in a local 5k.  It is going to be only my second run since running the Rock n Roll half marathon in New Orleans on February 24th.  I still feel like my knees are in recovery.  Hopefully the pace isn’t to quick and I’m feeling fresh and ready to go on Saturday.

We have also scheduled to run in an 8k on St. Patrick’s Day, and guess who is joining??? Dustin!  I’m so excited!  This is our first run together!!  I hope he loves it!!  I need to figure out what our green outfits will look like.
